Rabbit Burger Recipes

  • 2 pounds of rabbit
  • 1/2 cup bread crumbs
  • 1 egg
  • 2 tablespoons of milk
  • 1 teaspoon of Sage
  • salt and pepper
  • 1/2 cup chopped onion
  • 1/4 cup chopped celery
  • 2 tablespoons of milk
  • 4 tablespoons of oil

Wash and marinate meat in salt (or vinegar) and water for one hour. Then mince or cut into small pieces. Add crumbs, egg beaten with milk and seasonings, onion and celery. Mix and form into small balls. Sear in hot fat. Reduce heat and cook for 15 min. Serve with tartar sauce or jelly.
